Well, I know what I will be making this St Patrick’s day, this delicious Green Mac and Cheese recipe. 

And no I haven’t converted into a food blogger, haha but I was browsing some Irish recipes on Youtube and came across this version. 

I was worried there would a lot of food dye which is just a terrible idea. But this is packed with loads of greens in the sauce and when cooked with the pasta. 

Perfect for those little kids that don´t want green vegetables. It´s like pesto sauce. But the flavour is so delicate.

Green mac and cheese ingredients:

1 lb elbow macaroni
3 c whole milk
1 c packed fresh spinach
3 tbsp unsalted butter
2 tbsp flour
4 c grated white cheddar cheese
2 c chopped broccoli florets
1 c peas

Fun fact about St Patrick:

  • Irish immigrants began observing St. Patrick’s Day in Boston in 1737 and the first St. Patrick’s Day parade in America was held in New York City in 1766.
  • For most of the 20th century, Saint Patrick’s Day was considered a strictly religious holiday in Ireland, which meant that the nation’s pubs were closed for business on March 17.  In 1970, the day was converted to a national holiday, and the beer resumed flowing.
